Bresaola rucola e grana/ Bresaola rocket and Parmesan cheese

Bresaola di manzo con rucola e grana

Ingredienti:

  • Bresaola di manzo o di cavallo
  • Rucola fresca
  • Grana Padano a scaglie o Parmigiano Reggiano
  • Olio e.v. d’oliva
  • Sale, pepe
  • Senape
  • Limone

Disporre su un letto di rucola (condita con olio, sale e pepe) le fette di bresaola arrotolate. Guarnirle con le scaglie di grana e bagnarle con delle goccie di un’emulsione di senape, olio e.v. d’oliva e un goccio di limone.

Bresaola with rocket leaf and Parmesan Cheese

Ingredients:

  • Bresaola (dried salt beef or horsemeat typical of the Valtellina area)
  • Fresh rocket leaf
  • Parmesan cheese shavings
  • Extra virgin olive oil
  • Salt, pepper
  • Mustard sauce
  • Lemon

Put the slices of bresaola on a bed of rocket leafs dressed with oil, salt and pepper . Garnish with parmesan cheese shavings and dress with a sauce  made of lemon juice, olive oil and mustard.
